
SWEET POTATOES WITH SPINACH
1 tbs Ghee butter or olive oil
1 small red onion
2 bundles of fresh spinach
1 tbs roman caraway seeds
1 tsp turmeric
1/2 l stock
salt, pepper
Peel potatoes and cut into cubes. Sautee onion on Ghee. Add sweet potatoes. Pour in stock, add spices. Cook until half tender. Add spinach, mix, cook for 5 min. Salt and pepper to taste.
Serve with rice.
