- 1 onion
- 4 cloves garlic
- 500 g fresh spinach
- 200 g vegetable broth
- 250 ml heavy cream (or half & half)

Instructions
- Sauté the finely chopped onion and crushed garlic.
- Add the diced potatoes, broth and cook until the potatoes are soft.
- Add washed spinach leaves and cook for about 5 minutes.
- Finally, mix the soup with an immersion mixer. Add heavy cream and season with salt and pepper.
- This soup can be served with croutons, sour cream or grated parmesan.
