Ingredients
- 1 tbsp. Ghee butter
- 1 large onion
- 3 medium potatoes
- 2 medium carrots
- 1 parsley root
- 1/2 celery root
- 1 liter vegetable broth
- A handful of dried mushrooms
- 1 bunch parsley leaves
- salt, colored pepper
- 3 garlic cloves
- A pinch of caraway seeds
- 1-2 eggs beaten

Instructions
- Pour boiling water over the dried mushrooms, cover, and set aside.
- Peel all washed vegetables. Cut all into cubes except for the carrots (wheels).
- Sauté finely chopped onion on Ghee until golden brown.
- Add all vegetables and caraway seeds and pour the broth in after a little while.
- Add the drained mushrooms and cook until soft.
- At the end, add crushed garlic, chopped parsley, and salt/pepper to taste.
- Anyone who likes thicker soups can also add 1-2 beaten eggs.
