Roasted potatoes in yogurt marinade and herbs
cut up into slices and then halved
white Greek yogurt
(can be dried)
You can add crushed garlic
roasted sausage or bacon
In a large bowl, mix all the ingredients (for the marinade).
Then add the sliced potatoes and cover them completely in marinade.
Spread them evenly on a large baking sheet lined with the baking paper and bake in a preheated oven at 400F for about 30 mins or until golden brown.
Serve on a plate with sunny side up egg, roasted sausage or bacon.
Sprinkle with chopped parsley.
