  1. In a large bowl, mix all the ingredients (for the marinade).
  2. Then add the sliced potatoes and cover them completely in marinade.
  3. Spread them evenly on a large baking sheet lined with the baking paper and bake in a preheated oven at 400F for about 30 mins or until golden brown.
  4. Serve on a plate with sunny side up egg, roasted sausage or bacon.
  5. Sprinkle with chopped parsley.
