Ingredients
- 5 large peeled potatoes cut up into slices and then halved
Marinade:
- 3-4 tbsp. olive oil
- 3 tbsp. white Greek yogurt
- salt, pepper
- 1 hot pepper (can be dried)
- 1/2 tsp. dried mint
- 1 tbsp Zaatar spice
- You can add crushed garlic
- 2 eggs
- roasted sausage or bacon

Instructions
- In a large bowl, mix all the ingredients (for the marinade).
- Then add the sliced potatoes and cover them completely in marinade.
- Spread them evenly on a large baking sheet lined with the baking paper and bake in a preheated oven at 400F for about 30 mins or until golden brown.
- Serve on a plate with sunny side up egg, roasted sausage or bacon.
- Sprinkle with chopped parsley.
