
BAKED SPAGHETTI SQUASH WITH SPINACH SAUCE

Ingredients
- 1 pcs spaghetti squash
- pepper, salt
- 2 tbsp olive oil
For sauce:
- 2 pcs chicken breast
- pepper, salt, poultry seasoning
- 2 tbsp olive oil
- 1 onion
- 4 cloves garlic pressed
- 3 pcs tomatoes cubed (or heandfull of cherry tomatoes)
- 100 ml stock
- 100 g spinach
- 100 g grated parmesan cheese

Instructions
- Cut squash in half, remove the seeds, season and drizzle with olive oil.
- Bake with the cut side down for 30-45 min until tender.
- Chop onion, sautee in a pan.
- Add cubed chicken, season and grill from all sides.
- Add chopped tomatoes, garlic, stock.
- Cover and simmer for 15 min.
- Add spinach and cook 5 more min.
- Using fork, scrape the inside of the squash, put on plate, pour sauce over and top with cheese.
