Ingredients
- 1 eggplant larger
- 1 cup tomato puree or tomato sauce (250 ml)
- 1 tomato
- 16 oz mozzarella cheese
- fresh basil leaves
- 3-4 cloves of crushed garlic
- 2 tsp. olive oil
- 4 oz grated cheese (whichever you like)
- 4 oz Parmesan cheese

Instructions
- Pour tomato puree/sauce into a baking dish. Add slices of eggplant, tomato, mozzarella, and basil leaves in a circular pattern.
- Season with salt, pepper, crushed garlic and drizzle with olive oil.
- Cover with foil and bake in a preheated oven at 370° F for about 50 minutes.
- When almost done, remove the foil and add the grated cheese and bake until golden brown.
