Ingredients
- 4 zucchini
- 1 onion
- 1 apple
- 1 larger carrot
- 1/4 celery root
- 1 parsley root
- 2 hard boiled eggs
- 4 pickles
- (ham optional)
- salt, pepper
- 4 tablespoons sour cream
- 1-2 tablespoons mayonnaise
- 1 tablespoon mustard

Instructions
- Cut up zucchini (unpeeled), carrots, celery and parsley roots in small cubes and cook until semi-soft. Cut up the other ingredients in cubes as well. In a large bowl, mix everything, add salt, pepper and finally mix in the sour cream, mayonnaise and mustard. Let it rest in the fridge for a few hours.
- Serve.
