  1. Cut up mango and onion into small cubes and put in a bowl. Add rinsed red beans (under running water), finely chopped parsley (or coriander), salt, pepper, and drizzle all with lemon. Mix thoroughly.
  2. Leave for a while in the fridge before serving with tortilla chips.
