- 220 g all purpose flour
- 140 g powdered sugar
- 100 g grated coconut
- 2 teaspoons baking powder
- 80 g butter soft
- 1 teaspoon lemon extract
- 1 lemon zest
- 2 eggs whisked

Instructions
- INSTRUCTIONS: Mix all the above ingredients until a sticky dough is formed. Place it in the fridge for an hour, then take it out and make small balls.
- Roll the balls in granulated sugar and then in powdered sugar.
- Place on a baking sheet lined with baking paper, spacing them apart and bake at 340° F for about 12 minutes.
- Take out while the cookie surface is still soft, it will harden when the Crinkle cookies cool down, but the inside will stay nice and soft. (Makes Approximately 40 Crinkles).
