Ingredients
- 150 ml sugar
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground ginger
- 1/4 tsp ground nutmeg
- 2 tsp ground cinnamon
- 175 ml flour
- 2 medium carrots finely grated
- powdered sugar
Filling:
- 1 pc Philadelphia cream cheese
- 4 tbsp softened butter
- 250 ml powdered sugar
- 1 tsp vanilla extract

Instructions
- In a large bowl beat the eggs with electric mixer, add sugar, vanilla, all the species, baking powder, salt and flour and beat together.
- Stir in the carrots.
- Bake on baking sheet lined with aluminum foil or baking paper at 180 C for about 15 min.
- While still warm, transfer onto a clean towel and roll up.
Prepare the filling:
- Beat all the ingredience together until smooth.
- Unroll the cooled sheet, spread filling and roll up again.
- Chill and dust with powdered sugar.
