Tuscon Creamy Sauce with Chicken
Heat olive oil in large sauce pan. Grill chicken breast seasoned with salt and pepper slowly from both sides until done.
Remove the meat. Add cream, chicken stock, seasoning, garlic, parmesan. Mix and cook for few minutes. Add tomatoes, spinach and return meat into the pan, cook for a minute.
Serve over wide pasta noodles.
BAKED SPAGHETTI SQUASH WITH SPINACH SAUCE
Cut squash in half, remove the seeds, season and drizzle with olive oil.
Bake with the cut side down for 30-45 min until tender.
Chop onion, sautee in a pan.
Add cubed chicken, season and grill from all sides.
Add chopped tomatoes, garlic, stock.
Cover and simmer for 15 min.
Add spinach and cook 5 more min.
Using fork, scrape the inside of the squash, put on plate, pour sauce over and top with cheese.
BAKED POTATOES WITH GREEN BEANS< TOMATOES AND CHICKEN (
Line large baking sheet with parchment paper.
Cut red potatoes into quarters, add cherry tomatoes, season, drizzle with olive oil and bake 25 min at 175 C.
Mix the marinade ingredience, coat meat.
Add green beans and layer over potatoes, drizzle with leftover marinade and bake additional 35 min until the meat is tender.
