HONEY BLUEBERRY PIE WITH ALMOND CRUMBS

300 g flour
20 g yeast
150 ml milk
1 tsp sugar
100 g butter
2 yolks
1 egg for brushing
lemon peel
dash of salt
butter

Filling :
800 g blueberries
100 g honey

Crumbs for topping
60 g butter
40 g sugar
20 g vanilla sugar
80 g flour
80 g finely ground almonds
Mix everything together

Let yeast rise in lukewarm milk with sugar and dash of flour. Then mix in the rest of flour, yolks, melted butter, salt, lemon peel and kneed into a smooth dough. Co with towel and let rise for 45 min. Spread the dough on greased baking sheet, cover with blueberries mixed with honey and sprinkle with almond crumbs (coarsely ground). Brush sides with egg and bake 30 min at 170 C.
